Don?t you just love that whole thing?a Too Easy Recipe?my lovely husband Mr Beach Cottage came up with that term in the early days of recipes on this blog?easy little things that I make that are indeed a no-brainer, so very much too easy Smile

Now, know this : if you fancy a seachange, take yourself to the other side of the world to live by the beach and find yourself Down Under, you need salads, you need ?em quick and you need ?em impressive?

?.there?s one thing I have learnt here with this climate, with the old barbie cooking, with outdoor entertaining?you need to have good salads that not only taste good but behave themselves..a wilting salad at an Australian barbecue you do not want?

Which leads me to this..but I must just say here that this is far from a recipe?to be quite frank, if you can cut up a vegetable, grind a bit of salt and pour oil then you can make this.

As ever though with recipes on this here blog, this makes you look like a Domestic Dudette when really you have been spending way too much time reading blogs and soaking in the bath?now we don?t need to tell anyone that?it?s our little secret?

This needs no fancy equipment, no long drawn-out trips to far-flung speciality shops and it certainly does not cost a fortune?I will say though that if you are serving this to guests you will, for the best presentation scenario, need to find yourself a bit of a super vintage platter..because though this has about it, somehow, the taste of the exotic, it does errrr ever-so-slightly on the side of un-appetising when served on a white plate?trust me here, I am the queen of white, but, when making this you need some colour about your person.

Beach Cottage Recipe

Fennel Salad

1 x large bulb of fennel

olive oil

lemon juice

salt and pepper

1. very finely slice the fennel and add to platter

2. dress with olive oil and squeeze of juice from half the lemon

3. generously season with salt & pepper

4. add a few strands of the fennel fronds and some lemon

This may seem like too simple a recipe, you may think that this could not possibly be that nice..but girlfriends, you know me, always looking for the easy way out in life and this is just that?serve up a big platter of this on a vintage fancy plate and not only is it impressive it tastes that way too?

While I was taking the photos for this on Sunday (we had it with lasagne) I felt perhaps that this was too simple to include on the blog but then thought that this is so much part of the things that I ?cook? in this old cottage, that I couldn?t really not include it here?

This is very much that salad that you need up your sleeve to serve with a simple meat or something that you have thrown in your slow-cooker, when you have invited people over in a flurry of friendship at the beginning of the week and by Friday, after a long week of kiddos sport, of husbands, of cleaning toilets and picking up laundry you wonder quite why you asked them again, you begin to hate the thought of them entering your abode and you start to concoct all sorts of strange illnesses so you can cop-out.

But instead of all that, trust me, just make this.
